vegan onion muffin recipe

here is how to make this very weird muffin.

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup diced red onion

  • 1/4 cup vegetable oil

  • 1/4 cup unsweetened almond milk

  • 1/4 cup water

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

Instructions:

  • Preheat oven to 375°F (190°C)
  • In a large bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, whisk together oil, almond milk, and water.
  • Add wet ingredients to dry ingredients and stir until just combined
  • mix in in the diced red onions.
  • Divide batter evenly among a greased muffin tin.
  • Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.

In my opinion the muffins are ok but other people, cough cough that never had them, say they are bad.
